Increasing global demand for originate food products from diverse sources, outbreaks of disease in animals, presense of chemicals above acceptable limits in feed or in food, global supply of genetically modified organisms (GMO) and the effect of environment on the food products can treathen consumers. These factors and food scandals have resulted in new regulations. Risks to food security do not respect international boundaries and the number of warnings has increasing tendency. EU created the system of Quality policy to encourage production and quality of traditional food products. Its importance lies not only in keeping the original production processes or in the production of traditional products, but also helps to maintain and ensure the rural development.
