In the conditions of the Republic of Belarus at a dairy complex 'Gniezno' of Volkovysk district in Grodno region (Belarus), (which was located in the area of OJSC 'Bellakt' and which was one of suppliers of raw materials for the production of infant food) there were realized studies on chemical composition and technological properties of cow milk of control herd, depending on health status, age and stage of lactation. The results of the research were used in development of evidence-based principles on formation of dairy cattle herds, aimed at getting milk suitable for production of infant food products. The highest content of fat and protein was marked at cows of the first, second and the last two lactation months. In these months mass fraction of fat amounted 3,94% and 3,82%, 3,84% and 4,08%, protein – 3,46% and 3,34%, 3,37% and 3,59% respectively. The lowest amount of fat was marked on the third month of lactation – 3,62 and 3,16%, respectively; lactose – on the first month (4,77%) that was connected with physiological state of animal in course of lactation.
