Экспандированные пищевые продукты на основе зернового и пряно-ароматического сырья

In the conditions of the Republic of Belarus there were presented results of studying new opportunities for fruit and berry processing in production of expanded products on the basis of grain raw material. For the experiment there were used fruits of quince tree (Cydonia oblonga Mill), cinnamon rose (Rosa majalis Herrm), berries of blueberry (Vaccinium myrtillus), quickbeam (Sorlus aucuparia L.), cranberry (Оxicoccus marcocarpus). In course of the study there were developed recipes of expanded products on the basis of grain and fruit and berry raw materials growing in Belarus. The biochemical structure of fruit and berries being used, as well as the products received were investigated. Resesearch results showed that application of local fruit and berry raw materials in production of expanded grain products made it possible to improve their organoleptic properties and provided their antioxidant characteristics. The best results were marked for cranberry, quickbeam, and blueberry.
