Se determinaron los rendimientos y mermas en el proceso de sacrificio, refrigeración y deshuese de cerdos de un cruce comercial Yorkshire x Landrace x CC21 que se recibían en la planta piloto del Instituto de Investigaciones de la Industria Alimentaria. Se utilizaron 18 cerdos machos castrados y hembras con 24 horas de ayuno con 96.5 kg de peso vivo promedio. El rendimiento de la canal caliente fue 72.6% y fría, 71.3%. La merma en refrigeración en las primeras 24 horas fue de 1.2%. Los rendimientos de los subproductos más importantes que se generan en el proceso de sacrificio, hígado, corazón, lengua y diafragma, fueron 1.5, 0.3, 0.2 y 0.3% respectivamente. Los rendimientos de los cortes principales fueron 29.3% para la pierna, 27.3% para la paleta, 17.0% en el caso del lomo y 16.6% en la tocineta. El porcentaje de carne, hueso y grasa mas piel en la pierna fue 62.0, 13.4 y 24.5; en paleta, 57.0, 17.1 y 21.8 y en lomo, 42.5, 24.4 y 33.0, en ese mismo orden.. Se sugiere que los índices establecidos pueden ser de utilidad para desarrollar la gestión de calidad en condiciones de matadero durante la manipulación de cerdos sacrificados

Yield and losses were determined during the process of sacrifice, refrigeration and boning of pigs from a Yorkshire x Landrace x CC21 commercial cross which were received in the pilot plant belonging to the Research Institute of the Alimentary Industry. Eighteen castrated males and females weighing on average 96.5 kg were subjected to a fasting period of 24 hours. Hot and cold carcass yield was 72.6 and 71.3%. Losses due to cooling during the first 24 hours accounted for 1.2%. Yields corresponding to the more important by-products which were generated during the sacrifice process, liver, heart, tongue and diaphragm, were 1.5, 0.3, 0.2 and 0.3% respectively. Yields of primary cuts were 29.3% for leg, 27.3% for back, 17..0% in the case of loin and 16.6% for belly. Meat, bone and fat plus skin percentage in leg were 62.0. 13.4 and 24.5, in back, 57.0, 17.1 and 21.8, and in loin, 42.5, 24.4 and 33.0, in the same order. It is suggested that the established indices are useful for developing a quality management in slaughterhouse conditions of pig sacrifi handling.
