The best olive production and quality occur in arias having mild winters and long, warm, dry summers. Olive is subtropical tree. Sensitive to hard freezing temperatures. The shoots and small woods are injured, often by temperatures below -١to -٢ ºC. Large limbs and whole trees can be killed if temperatures fall below١٥ ºC . Cultivation techniques such as irrigations, fertilizer, late pruning and bare-soil maintenance system, have been widely use in olive orchards to limit frost damage. The most effective way to combat damage apart from simply frost-prone areas is to use cold-hardy planting material. The results from the researches indicated that the cultivars and genotypes had significant deference in frost resistance. For example in Golestan province study showed Two local genotype (.Ilam malak shahi and lemski) are less sensitive to frost damage that can be used in area with cold damage.
