Final assessment on bread making quality of promising wheat lines proposed for normal and terminal drought conditions of temperate zone

Protein %, Protein quality (SDS,Zeleny), Hardness Index, Amylose% and Gluten Index in 17 lines of promising wheat lines proposed for normal and terminal drought conditions of temperate zone(5 lines of ER-82, 2 lines from each line of ER-M-79, Er-M-81, Er-M-80 and 6 lines of WS-M-82) were determined. The highest protein% was about 12, which related to line of WS-M¬82-9 andWS-M-82-13. The highest protein quality (Zeleny) was about 33 related to the 2 above mentioned lines. The highest Hardness Index was about 55 related to lines of M-81-13 and M-82-14.The highest Gluten Index and the highest SDS were related to line of WS-M-82-9 .The highest amylose content 34.5% was related to the line ofM-82-14. Also 4 good quality lines were selected for determination of bread quality under the Rapid Mix Test method.At the end lines ofWS-M-82-9 andWS-M-82-13 were found the best two lines among the others
