Seeds of different origin respectively of varieties of sunflower, poppy, linseed, false flax, indian mustard, oilseed radish and rocket which were different in the total content of oil as well as in the content of their dominant fatty acid each, were studied by light and scanning electron microscopy. The four cruciferous varieties were characterized by oleosomes of similar shape and small diameters, the oleosomes of sunflower, linseed and poppy were much greater. Significant differences were found in the diameters of the oleosomes each of the investigated origins of sunflower, linseed and false flax. In linseed and poppy, which store their oil in the embryo as well as in the endosperm, differences in the structure of the oleosomes within the two storing tissues could be put opposite to the proportional composition of their stored fatty acids.
