Physical and chemical analysis of 4 watermelon varieties, i.e., the seedless, Sakata, Sugar Baby and a local cultivar, was conducted in Pasarminggu (Jakarta, Indonesia) in February 1986. Results indicated that physical characteristics of watermelon fruits were greatly affected by variety and its size, however, these two factors did not affect the juice content. Juice content was ranging from 44 to 51 percent. Comparing the chemical content of the flesh, it was shown that variety or cultivar did not significantly affect acid content, vitamin C content, and total soluble solid (TSS)-acid ratio, but did significantly affect the TSS (Sugar Baby was the lowest). The flesh in the center of fruit was highest in TSS, TSS-acid ratio and vitamin C content.
