Chemical composition of air-classified and stack-sieved fractions of a high-fibre rye milling stream.

A high-fibre milling stream from rye, containing 50% starch, 24% dietary fibre and 12% crude protein, was obtained from a commercial mill. Impact milling and air classification of this stream in a pilot unit with constant air flow and decreasing wheel speed resulted in fractions with high content of starch (up to 70%), dietary fibre (up to 39%) and crude protein (up to 20%) respectively. The fraction with the highest dietary fibre content contained as much as 22% arabinoxylan and 3.6% mixed-linkage beta-glucan. Air classification of a more finely impact milled stream increased the yield of the fine fractions as well as their content of crude protein and ash. On the other hand, air classification of a defatted and impact milled stream reduced the crude protein contant in the finest fraction. Stack-sieving of selected air classified fractions revealed a potential for further concentration of the chemical components.
