In this study the quantitative characteristics of the most important properties were obtained by studying 14 varieties of processing tomato, during three consecutive years. From the experimental results an average value of each studied property was calculated. It was found that for the significance level alpha=0.05, 144 from 325 possible correlations were significant. Some new correlations important for breeding of processing tomato were found. Among others there was observed a strong connection between covering layer thickness in different parts of fruits, which, at the same time, correlated with pericarp thickness. A positive correlation between the total acidity and the dry matter content was found. The colour was negatively correlated with pectic substances content and covering layer thickness. There was found the very high value of correlation coefficient between fruit firmness determined by two different methods. The simple three fall tests worked out in this study very well differentiated the varieties in respect of fruit resistance to injury.
