Prove di arricchimento dei mosti d' uva mediante osmosi inversa. 1: Riscontri analitici ed organolettici dei mosti e dei vini prodotti durante la vendemmia 1988 [in Lombardia].

Concentration experiments of grape musts (Riesling and Barbera of Oltrepo Pavese DOC) by reverse osmosis (OI) were done during the 1988 vintage using a concentrator ROMAS developed by SnamProgettiBiotecnologie. The concentrated musts were then wine-made in comparison with untreated samples (Tq) or samples added with MCR (Rectified Concentrated Must). A formula and tables were developed to easily calculate the needed percentage loss of water for gaining 1% sugar concentration. The composition of the concentrated and untreated grape musts and that of the watery liquids of permeation across the membrane, showed that only few milligrams of inorganic anions and cations and low molecular weight organic molecules were not retained by the membrane. Thus all components of the grape musts were proportionately concentrated in relation to the water eliminated across the membrane. Duo-trio and preference test were used to evaluate, at two different ages (at 4.5 and 8 months from the crushing), the organoleptic characteristics of the wines with a tasting committee composed of 14 oenologists. The results of the tests showed a high significative difference between the wines enriched (OI and MCR) and those not enriched (Tq), but no preference was observed among the three types of wines obtained (OI, MCR and Tq), except in the case of Riesling, between Tq-wine and MCR-wine. Furthermore, no preference was observed between OI-wines and MCR-wines.

ITALIANO: Sono state condotte prove comparative di arricchimento di mosti Riesling e Barbera dell'Oltrepo Pavese mediante aggiunta di MCR e Osmosi inversa. Sono stati controllati le composizioni dei mosti prima e dopo l'arricchimento e dei permeati, nonche dei vini finiti e stabilizzati nei riguardi delle precipitazioni tartariche. Prima dell'imbottigliamento e dopo due mesi di sosta in bottiglia, i vini sono stati giudicati dauna commissione di assaggio composta da 14 tecnici, esperti conoscitori delle DOC in studio, mediante il duo-trio test e il test di preferenza. I risultati delle analisi delle caratteristiche chimico-fisiche dei mosti e dei permeati ottenuti, indicano che le membrane impiegate negli esperimenti condotti non hanno lasciato passare che tracce di anioni e di cationi inorganici e molecole organiche a basso peso molecolare. Di conseguenza tutti i componenti del soluto del mosto trattato si sono concentrati pressoche inugual misura e in rapporto diretto alla percentuale di acqua asportata. I risultati del duo-trio test e del test di preferenza, eseguiti a 4.5 e a 8 mesi dall'ammostatura, hanno dimostrato che la commissione di assaggio ha differenziato in modo altamente significativo i vini ottenuti dai mosti arricchiti sia con MCR sia con osmosi inversa da quelli ottenuti dai mosti lasciati tal quali. Tuttavia, eccetto che inun caso tra Tq e MCR, non furono espresse preferenze significative per nessuna delle tre tesi a confronto. Non fu riscontrata infine differenza significativa tra i vini ottenuti da mosti arricchiti con MCR e quelli ottenuti mediante osmosi inversa.
