In this work we have established that in Chile two varieties (C1 and C2) of Cucurbita ficifolia are cultivated. At present, they have not been classified taxonomically or morphologically. The lipid fraction of C2 variety showed a saturated fatty acid/monounsaturated fatty acid/polyunsaturated fatty acid relation of (1:1,8:3,5), similar to that of the edible oils marketed in the country. The C1 variety showed a relation of (1:1,2:1) close to recommended ratio (1:1:1). In the unsaponifiable fraction of the seeds of both varieties, the hydrocarbons are the main component, with three sterols being present in small quantities. The residual meal of the C2 variety showed a higher content of total proteins, similar to that determined for soybean.
