Bovine bone marrow shows higher content of unsaturated fatty acids and lower content of saturated ones as compared to swine bone marrow. However, the composition of fatty acids in the bone marrow and muscles fat is similar in both animal species. Oleic, palmitic and stearic acids dominate. Age of the animals has no significant influence on the composition of the acids.
