Water activity was measured in selected cheese, milk concentrates and yogurt. Measurements were done by an apparatus designed in Agricultural Academy in Poznan. Principle of operation of the measuring apparatus is based on a measurement of moisture equilibrium into a hermetic measuring chamber including inside sample of raw material or product. Water activity estimated in milk products was from 0.991 to 0.298. Recognition of water activity value is important because it may be used to control stability and quantity of foodstufts.
