Dietary phytate and liver iron repletion in iron-depleted rats.

Extract: Male rats were fed a low-iron diet until hemoglobin levels averaged 6.9 g/100 ml of blood. The animals were then randomly divided into 7 groups of 10. One group was killed for base-line data, while the remaining 6 groups were each assigned to whole food diets containing different breads and different levels of phytate. The animals were kept on these iron-repletion diets until hemoglobin values approximated 14g/100 ml, which occurred in 26 days. Hemoglobin repletion and total liver iron content of rats were not significantly affected by consumption of the high phytate containing diets. Neither phytate content nor type of bread consumed seemed to significantly affect iron absorption in iron-depleted rats as measured by hemoglobin and liver iron repletion.
