This paper investigates the fatty acids content in the oil of wheat varieties grown in the Nis region (Yugoslavia). The following varieties were included in the experiment:Partizanka, Novosadska rana 2, Kragujevacka 56, Kragujevacka 58, Zlatna dolina, Posavka 2, Balkan, Orasanka and Bezostaya. The following conclusions were drawn: -There is a difference between the acid composition of the lipids in the investigated varieties and harvest samples of the same varieties. These differences refer especially to the percentage of the saturated fatty acids, i.e. palmitic and steatic acid. -The differences concerning the content level expressed in percentages of the investigated acids in the given wheat assortment are evident, depending on the vegetation period conditions (1978-1980). Quite a stable concentration uniformity of separate acids is present, depending on the varieties in the whole region. This refers especially to linoleic and linolenic acid. -The influence of the agroecological factor on the acid composition of the lipids in the wheat in the whole region is evident and the limiting values of the influence depend on the genetic and biochemical potential and varieties characteristics. Further investigations are in progress.
