Nine wheat cultivars improved at Martonvasar (Hungary) (MV-14-85, MV-107-86, MV-21-85, MV-8, MV-4, MV-10, MV-9, MV-15, MV-16) were tested for their gliadin content by the sandwich ELISA technique, in order to assess their quality. The main steps in the analytical methods used were as follows: extraction of the antigen, production of the specific immune serum, determination by the indirect ELISA method of the titer of the serum, assessment of the gliadin content of the wheat cultivar by the sandwich ELISA method. The analyses have proven the ELISA method to be suitable for the classification of the wheat flours, with special reference to their protein structure. The analyses were extended over the protein %, the amount of gliadin, its spreading, the sedimentation value and the % of wet and dried gliadin (at 105 centigrade) using the results for classifying the wheat cultivars in group A2 or B2.
