A field experiment was carried out to study the effect of P and S fertilization on carbohydrate and ascorbic acid contents of groundnut kernels. Treatments comprised of four levels each of S (0, 20, 40 and 60 kg S/ha) and P (0, 25, 50 and 75 kg P/ha) and all their possible combinations. It was observed that almost all the treatments caused a significant decrease in all forms of carbohydrate i.e.; reducing and non-reducing sugars and starch. This could possibly be explained on the basis of higher conversion of carbohydrates to oil and protein under the influence of increasing levels of S and P. Ascorbic acid content was found to increase significantly with increasing levels of P application whereas, the effect of S was nonsignificant in this regard.
