The aim of the investigations was monitoring of the quality of vegetables grown in different habitat conditions in the mid 80-ties and in 1991, with special regard to nitrate content. It was proved that the chemical composition of vegetables, being the species feature, depends on the time of harvest. The higher content of nitrogen, nitrate, potassium and sodium in vegetables was observed in early stages of vegetation (for lettuce and radish - April, May; for carrot - June). The nitrate content in vegetables sporadically exceeded the limit set by the State Sanitary Institution.
