The study aims to storage stability through the study of MSI pattern. The rice varieties used were Ketan-lumbu, Cisadane and IR-54 which are respectively a low, medium, and high amylose content. The equilibrium moisture content conditions were settled by adsorption static method under 30 centigrades of three kinds of water activities (aw). Results of the experiment indicated that there were no different in starch and protein content among the rice varieties. The c and n constants obtained for the equilibrium moisture content observed as calculated by Henderson equation showed a differences among the rice varieties in both rough and milled rice. Varietal differences were also observed in the MSI curves from the calculated equilibrium moisture content and the curve lines crossed at a certain aw value (crossing point). In conclusion rough and milled rice with varietal differences in amylose content would have a different storage stability, therefore they need a special condition in storage with the exception at the crossing point aw condition to reach optimum storage stability.
