In this investigation, mixtures of cottonseed oil and some animal tallows, being goat-and camel tallows, in ratio 1:1 by weight, were random interesterified. 0.3% of both sodium methylate and sodium ethylate were used individually in the interesterification process as catalysts. The effect of interesterification process on some characteristics, fatty acids composition and the behaviour of dilation curve of the mixtures was studied. Pronounced differences between cottonseed oil, goat and camel tallows regarding refractive index, melting point, free fatty acids, peroxide value, iodine value and saponification value were found. While cottonseed oil was liquid at ambient temperature, goat-and camel tallows were solid, having melting point and iodine value of 46.7 C and 32.9; and 41.3 C and 45.1.
