The effects of different fertilizers on three varieties of red beet brought up on aluvial clay soil were investigated. It was found out, that the kind of fertilizer itself has no effect on yield level per ha. The main chemical composition of raw red beet (total solids, dry matter (refr), total sugars, ash and pH-value) was analyzed. No causality between reached yields per ha and chemical composition was observed. The content of mineral matters was estimated in order to determine the nutritive characteristics of raw red beet and fermented juice. The quantity of 100 g beet satisfies the daily requirements of human organism for K 37,5%, Na 1,6%, Ca 3,3%, Mg 4,6%, P 4,8%, Fe 9,1%, and Cu 69% maximally allowed quantity. The quantity of 100 g of dietetic juice satisfies the daily requirements of human organism for K 22,5%, Na 0,9%, Ca 1,7%, Mg 2,4% (children) i.e. 0,3% (adults), P 2,2%, Fe 3,8% and Cu 14% of maximally allowed quantities.
