In Hungary 80-1000 thousand t/year pears are produced, amounting to 5-7 % of the total fruit production. The authors studied changes in the storability and quality components of 4 winter pear varieties (Hardenpont teli vajkorte, Bosc kobak, Serres Oliver, Teli esperes) for over 8 years. Harvesting was carried out on three occasions: ten days prior to the farm harvesting date, at this date and days after it. The fruit was put into cold storage at 1-2 centigrade with 88-90 % humidity in 4 x 20 kg lots per treatment. Measurements on refraction, total sugar content, inverse sugar content, acid content, sugar/acid ratio, reducing/inverse sugar ratio, flesh hardness and rotting losses were carried out prior to storage and then once a month. Prior to storage the basic quality components showed no significant differences for the varieties, though the standard deviation values were high. In the course of storage there was a reduction in acid content and flesh hardness of up to 25-40 %. The refraction and the sugar/acid ratio increased. When the storage period was increased from 60 to 120 days the shrinkage losses and rotting rose to 40-45 %. All the varieties tested were characterized by a strictly monotonous reduction in acid content to 50-60 % of initial value. This reduction was parallel to curve of storage losses, which means that the extent of storage losses can be predicted from the acid content measured at harvesting.
