A large review on the "life" of pears from harvest to consumption is here synthetized. The different behaviour of pear fruit as compared with apple fruit is outlined and the greater difficulties encountered in marketing pears is pointed out. Among climatic and agronomic factors which affect keeping quality, harvest time is especially examined. Storage of pear, both in normal and in controlled atmosphere, and maturation techniques are reviewed, and pathological problems are mentioned; new packaging techniques, such as single fruit wrapping are examined which could better comply with market and consumer requirements of good quality fruit. The synthesis ends with an outline of the present state of utilization of processed pears, mentioning new processing techniques and new products.
