Vitamins and cancer prevention: an epidemiologic overview.

The inverse association between cancer occurrence and ingestion of fresh fruits and vegetables is one of the most consistent findings in the international epidemiologic literature. The high content of antioxidant vitamins in these foods has been documented. Indexes of their intake have been developed and also found inversely related to certain cancers. Blood measurement of antioxidant vitamins and their precursors has shown lower levels in persons who later developed cancer. Although the antineoplastic mechanism of action of the antioxidant vitamins needs further elucidation, it seems clear that chemoprevention trials in humans should be encouraged.
