The comparison of carcass composition and meat composition of 11 hazel-hens captured in the autumn vs the other species of wild and domestic birds was carried out. The highest content of pectoral and femoral muscles in hazel-hen carcasses was obtained. A high protein content and low fat level in hazel-hen meat was stated.
