Evaluation of apple pomace as a hypocholesterolemic agent in baboons given a high-fat diet.

In order to evaluate the potential of apple pomace as a hypocholesterolemic agent, two groups of 18 post-adolescent baboons were placed on high-fat (20% beef tallow; 0.1% cholesterol) diets containing either 20% apple pomace or 11.2% paper pulp (to provide equal bulking) for six months. Apple pomace elicited and sustained a reduction of about 11% in total cholesterol levels; some of this reduction may, however, have been in the high-density lipoprotein fraction. Serum triglycerides were not affected. After the initial six month period, 9 animals from each group were placed on a mixture of apple pomace (10%) and paper pulp (5.6%), while the other animals remained on their original diets. The experiment was terminated after a further three months. Halving the amounts of dietary apple pomace did not diminish the hypocholesterolemic response. Effects on mineral status were suggested by the lower (p less than 0.001) femur magnesium content and the higher (p less than 0.05) femur iron content of animals given paper pulp. A possible initial reduction in zinc status on feeding paper pulp was not evident at the end of the study. Its hypocholesterolemic properties would appear to make apple pomace a potentially useful ingredient in cholesterol-lowering diets.
