Effect of planting dates and nitrogen fertilization on chemical composition of potato and quality of chips.

Effect of planting dates and nitrogen fertilization on chemical composition of potato and quality of chips was studied. The first date of planting resulted in higher dry matter and starch and lower reducing sugars content in potato tubers than later dates. Chips from potatoes planted early contained less fat than chips from potatoes of the shortened growing season. Increase level of nitrogen fertilization applied in potato cultivation resulted in the decreased dry matter and starch and increased of reducing sugars content of potato tubers. Chips from potato tubers grown on low nitrogen fertilizer doses were characterized by lighter colour than chips from potatoes intensively fertilized. Chips produced from the potato tuber of Dukat variety were of higher quality than chips from San and Bronka varieties.
