Basic goal of this research is to perceive a level and changes in consumption of fresh and processed vegetables in the Republic of Serbia. This research had encircled the period from 2006 to 2010. Average vegetable consumption in the Republic of Serbia was amounted 131.2 kg per capita, and was shown declining tendency, on average annual rate of 1.07%. Declining tendency has the following sorts of vegetables: potato, cabbage, tomato and pepper. The other sorts of vegetables have increasing tendency. The most intensive increase have realized root vegetables (carrot, parsley, celery and similar). Regionally observed, there is slightly higher consumption in the central part of the Republic of Serbia (132.7 kg) in regard to the same in Vojvodina (125.6 kg). In both regions was present a trend of decreasing consumption. More intensive decline is in the central Serbia (rate 1.14%) in regard to Vojvodina (rate 0.45%). Basic factor determining the vegetable consumption is life standard level, then the important role have supply, level of market prices, as well as habits in consumption.
