In this study, the effect of 400 ppm ascorbyl palmitate on fatty acid composition, tocopherol content and oxidative stability of cottonseed and olive oils during interesterification and during 28 days storage at 60°C have been studied. The results showed that interesterification had no considerable effect on fatty acid composition and carotene content of cottonseed and olive oils, however, this technique reduced the tocopherol content of tested oils.

Bu çalışmada, 400 ppm düzeyinde askorbil palmitat katkılı ve katkısız pamuk ve zeytin yağlarının interesterifikasyonu sırasında ve 28 gün süreyle 60°C de bekletmenin, bu yağların tokoferol, karoten, yağ asidi bileşimleri ve oksidatif stabiliteleri üzerindeki etkisi incelenmiştir. Çalışmanın sonuçları, interesterifikasyonun pamuk ve zeytin yağlarının yağ asidi bileşimleri ve toplam karoten içerikleri üzerine belirgin bir etkisinin olmadığını gösterirken, bu tekniğin yağların tokoferol içeriğini azaltıcı etkisi olduğunu göstermiştir.
