In the conditions of the Republic of Belarus there was realized a research on the production of environmentally friendly beef from beef cattle for the production of baby food and dietetic food. The aim of this work was to investigate the meat productivity and nutritional value of meat cross-bred Aberdeen-Angus x black-and-white bull calves of the first generation with a different pre-slaughter live weight as a new item in the technology of environmentally safe beef production. There were presented the results of studies showing the superiority of Aberdeen Angus x black-motley calves at slaughter weight of 460 kg in comparison with 400 kg: weight of chilled half-carcasses – on 15,2%, meat yield – on 1,9% or 33 kg, the amount of essential amino acids in the protein of meat – on 10,0%, by polyunsaturated fatty acids content in meat – on 1,9 times. In accordance with health and hygiene indicators the analysed meat of calves of both groups met the requirements for child food production.
