Drying is one of the basic food processing operations in agro-industry that requires a great amount of energy for food conservation process. The large number of researchers in the domain of natural and technical sciences is focused on energy consumption optimization process in industrial systems in order to provide sustainable development and modern technologies implementation. This paper will provide a review of many publications that have drying of food materials as primary topic, in order to provide a global view of all the problems related to drying process, selection of adequate dryer for chosen drying material.
