英语. The baking protein-free mixture MacMaster was added by corn flour, rice flour and buckwheat flour instead of starch in the following ratios: 10:90, 20:70, 40:60 and 50:50, respectively. The bread made from MacMaster and bread from baking first grade flour served as control. Increasing the dosage of buckwheat flour, corn flour, rice flour in a mixture reduces the bread volume compared to MacMaster samples. The crumb becomes denser and more fine-pored. As the dosage of buckwheat flour increases, a more pronounced brown tint appears, rice flour – grey, and corm flour – yellow. As the dosage of corn flour, rice flour and buckwheat flour increases by more than 40% to the starch weight in the mixture, the bread quality abruptly deteriorates" the crumb becomes more fine-pored, crumbly, in buckwheat bread containing buckwheat flour more than 50% the crumb become sticky, faltering. The study of the microstructure of experimental bread samples has found that in wheat flour-based beard starch granules are tightly covered by gluten proteins, and in the MacMaster bread they are joined to each other by using structure-formers. In buckwheat and corn bread a dense microstructure is observed, and in rice bread – a lot of voids filled with air. The study of rheological properties of the crumb has found that the plastic properties of the crumb of what and rice bread are the same, the elastic deformation of the latter being higher. The crumb of the MacMaster bread was less plastic and more elastic compared to the rice flour-based bread. The crumb of corn flour and buckwheat flour samples was characterized in less plasticity and elasticity compared to the MacMaster bread. The lightest crumb was observed in rice flour-based bread, the darkest one in buckwheat flour-based bread, the buckwheat bread was characterized by intensive red tint, the corn bread – yellow. The flavour bread profiles from MacMaster and rice flour were close to wheat bread. Bread samples added with corn flour, rice flour and buckwheat flour had a pronounced aftertaste, in the two latter the color of crumb and color of crust were more intensive. The volume of corn and buckwheat bread was less than in the wheat bread.

В состав безбелковой смеси для выпечки "МакМастер" (ММ) вносили рисовую (РМ), гречневую (ГМ) или кукурузную (КМ) муку взамен крахмала в следующих соотношениях: 10:90, 20:80, 30:70, 40:60 и 50:50 соответственно. Контролем служит хлеб, изготовленный из ММ и хлеб из пшеничной хлебопекарной муки 1-го сорта. Увеличение дозировки РМ, ГМ и КМ в смеси снижает объем хлеба по сравнению с образцами из ММ. Мякиш становится более плотным и мелкопористым. При увеличении дозировки ГМ появляется более выраженный коричневый оттенок, РМ – серый, а КМ – желтый. При увеличении дозировки ГМ, РМ и КМ более 40% к массе крахмала в смеси резко ухудшается качество хлеба: мякиш становится очень мелкопористым, крошащимся, у гречневого хлеба при содержании ГМ более 50% мякиш делается липким, заминающимся. При исследовании микроструктуры опытных образцов хлеба выявлено, что в хлебе из пшеничной муки гранулы крахмала плотно обволакиваются клейковинными белками, в хлебе из ММ гранулы крахмала присоединены друг к другу за счет использования структурообразователей. В гречневом и кукурузном хлебе отмечена плотная микроструктура, в рисовом – много пустот, заполненных воздухом. При изучении реологических свойств мякиша выявлено, что пластичные свойства мякиша пшеничного и рисового хлеба одинаковы, при этом упругая деформация последнего была выше. Мякиш хлеба из ММ обладал меньшей пластичностью и большей упругостью в сравнении с хлебом из РМ. Мякиш образцов из КМ и ГМ отличался меньшей упругостью и пластичностью в сравнении с хлебом из ММ. Наиболее светлый мякиш отмечен у хлеба из РМ, самый темный – из ГМ, гречневый хлеб отличался высоким содержанием красного оттенка, кукурузный – желтого. Вкусовые профили хлеба, полученного из ММ и РМ, были близки к пшеничному хлебу. Образцы хлеба с добавлением РМ, ГМ и КМ имели выраженное послевкусие, у 2 последних цвет мякиша и окрас корки были более интенсивными. Объем кукурузного и гречневого хлеба был меньше, чем у пшеничного.
