This Research was Conducted During Two Years Period (2010-2011) at Damascus University Facility of Agriculture Department of Food Science and Two Plants of Meat Industry (A and B) One of Them Implementing Food Quality and Safety Systems (I so 9001-Iso 22000-HACCP) and the Other is not The Purpose of this Research was to Evaluate the Situation of Luncheon Meat Industry In Syria and the Implementation of Food Safety Management Systems in this Industry the Results Showed that There is Decreasing in the Number of Plants Witch Implementation The Systems Comparing With Other Countries Worldwide The Research Aimed was to Clarifying the Benefits of I so 22000 Implementation in Luncheon Meat Industry in Syria by Comparing the Industry Stage From Raw Materials to Final product Between A and B Plants the Results Showed Differences in the Ability of Giving more Safe Products in Plant A Due to Implementation GMP and HACCP Procedures Quality Characteristics ( Chemical , Microbiological and Sensory Evaluation) Were Also Carried Out to the Products of two Plant and the Results Showed the Quality Systems Enhancing the Compliance With Local Legislations and Decreasing the Number of Noncon formity Status Witch Was 1 in Product A and 3 in Product B.
