Mechanical and thermal properties of soy protein isolate films blened with carboxymethyl chitosan

Soy protein isolate/carboxymethyl chitosan (SPI/CMCH) blend films incorporating with glycerol as plasticizer were prepared by solution casting on silicone plate. The effect of CMCH on thermal property (melting temperature (T sub(m)) and enthalpy of melting (delta H)) and mechanical properties (force break and percent elongation at break) of SPI/CMCH blend films were investigated. From differential scanning calorimetry (DSC) thermograph, enthalpy of melting (delta H) value of SPI/CMCH blend films increased when the CMCH proportion increased but melting point values were not significantly different in all condition. In addition, the CMCH addition could overcome the brittleness of pure SPI film and still maintained the force break value. The highest value of percent elongation at break was provided on the blend film containing 67 percent CMCH of SPI/CMCH content
