Nitrogen factor estimation for tilapia fillet from culturing in Thailand

Objective of this research is to estimate nitrogen content of Tilapia Fillet, culturing in Thailand. Such content will be set as nitrogen factor for fish content converting in products containing tilapia as a raw material. The Tilapia Fillet were collected from 10 major sources of aquaculture for exporting such as Chachoengsao, Prachin Buri, Suphan Buri, Kanchanaburi, Nakhon Pathom, Ratchaburi, Phetchaburi, Nakhon Nayok, Samut Sakhon and Samut Prakan. The aquaculture techniques are culturing fish in earthen ponds and hanging cases in running water from river or canal. The analysis result found that nitrogen contents in tilapia fillets, cultured in earthen ponds from different province showed in significantly difference. The nitrogen content in tilapia from hanging cases in running water from different provinces show not significantly in content level. And the nitrogen content in tilapia fillet from earthen ponds (2.94) is lower than the nitrogen content in tilapia from hanging cases in running water (3.09) since founding the different in feed used and farm management among two culturing methods. However, the raw materials used for produce tilapia fillets often come from earthen ponds. Therefore, estimating the nitrogen content from earthen ponds of 2.94 was proposed for Tilapia.
