Globalization and increasing competition in pasta industry as well as the increasing consumers requirements to pasta quality require excellently functioning system for qualification and classification of traded durum wheat. The grain producing countries of high quality grain market durum wheat on the basis of grain indices, as determined by grading and classification systems, intended to determine and preserve wheat safety and trade value according to its processing potential, ensuring at the same time balance between the interests of wheat processors and producers. Durum wheat is a traditional crop in Bulgaria and the introduction of a more objective and efficient system for classification of functional quality of traded wheat in order to respond to the requirements of the modern technologies is considered necessary. For this reason in the Institute of Cryobiology and Food Technologies a considerable research work throwing light on durum quality evaluation in the country was carried out as a good foundation for further development in the this direction. Defined technological quality of cultivated durum wheat in the country as well as the research work on the damaged durum wheat quality is the necessary base for the setting up of a test-based trade classification of durum wheat in Bulgaria.
