The monograph evaluates of the most important regularities of national and global markets of dairy products, describes the strategy of the development of milk producing industry of the Republic of Belarus. The main tendencies of the development of global dairy industry are analyzed for the period of 2009-2011; producing of different types of raw milk (cow milk, buffalo milk, sheep and goat milk) is evaluated. Quality parameters of milk production along with quality characteristics of milk itself are investigated. Processing of raw cow milk and producing of dairy products in global scale is researched; producing of drink milk, cheese, butter, milk fat and dry whole milk is calculated. The level of consumption of milk production is evaluated; dependence of life quality and health level of the people on milk consumption is analyzed. Evaluation of international and domestic dairy products trade by separate categories is presented; wholesale and consumer prices on milk production are displayed; factors, influencing price fluctuations, are analyzed. The most important categories of expenses and efficiency of dairy production are researched; perspectives of the development of global dairy industry are outlined. Main peculiarities of Belarusian milk producing branch are analyzed, the most important tendencies of the development of national dairy industry are described. The strategy of strengthening of dairy producing enterprises of the republic of Belarus is suggested.
