Some physico-chemical properties of agglomerated pineapple powder

Agglomerated pineapple powder was produced from fresh pineapple juice using the fluidized bed granulator with the help of a carrier, in this case sugar and some minor additives. Optimum process variables were used in order for agglomeration to be achieved successfully. Particles size analysis of the pineapple powder showed that 54 of the particles were smaller than 250 micrometer. The color of the pineapple powder was greenish-yellow, the bulk density was 0.67 g/ml, the moisture content was 2.1. The chemical analysis of the agglomerate showed that it consisted 97 total carbohydrate/sugars, had an energy value of 390 kcal/100g, had relatively high values of potassium and vitamin C.
