Food safety problems in the red Meat and meat products industry in Turkey and precautions | Türkiye'de kırmızı et ve et ürünleri sanayiinde gıda güvenliği sorunları ve öneriler

英语. In Turkey, food safety in the red meat and meat products industry which has a huge place in food industry has an importance to provide healthy products to consumers. Red meat and meat products industry covers the whole process starting from slaughtering the animals in slaughterhouses to packing of the meat. Slaughterhouse and combines which belong to municipality and private sector, the Meat and Fish Organization combines and private sector facilities that produce meat products are the main enterprises in the industry. However, precautions to be taken in such enterprises are not enough to ensure food safety in the red meat and meat products industry. The restrictions for food safety in the red meat and meat products industry that supply the raw material from husbandry sector has to be determine along the chain from the production of livestock to consumption of red meat and products. The aim of the study is to examine the food safety problems of red meat and meat products industry along the chain from production to consumption and to improve suggestions for these problems.

土耳其. Türkiye'de gıda sanayii üretiminde önemli bir yere sahip olan kırmızı et ve et ürünlerinin tüketicilere sağlıklı bir şekilde ulaşması gıda güvenliği konusundaki gelişmelerle yakından ilgilidir. Kırmızı et ve et ürünleri sanayii, hayvanların mezbahadaki kesiminden başlayarak paketlenmesine kadar geçen tüm süreci kapsamaktadır. Türkiye'de söz konusu sanayide, faaliyet gösteren kuruluşların başında belediye ve özel sektöre ait mezbahalar, kombinalar, Et ve Balık Ürünleri A. Ş.'ye ait kombinalar ve et ürünleri üreten tesisler gelmektedir. Bununla birlikte, kırmızı et ve et ürünleri sanayiinde gıda güvenliğinin sağlanabilmesi için söz konusu kurum ve kuruluşlarda alınacak önlemler yeterli olmamaktadır. Hammaddesini hayvancılık sektöründen alan sanayide, gıda güvenliğinin sağlanmasının önünde duran engellerin hayvanların yetiştirilmesinden başlayarak, kırmızı et ve et ürünlerinin tüketiciye ulaşmasına kadar geçen zincir boyunca belirlenebilmesi gerekmektedir. Bu çalışmada, Türkiye'de kırmızı et ve et ürünleri sanayiinde gıda güvenliğini sekteye uğratan noktaların, üretimden tüketime kadar olan zincir boyunca belirlenebilmesi ve bunlara yönelik çözüm önerilerinin geliştirilmesi hedeflenmiştir.
