A study on the slaughter characteristics and meat quality of two-year-old mirror carp of a local population was carried out at the Institute of Fisheries and Aquaculture. The fish were reared in authochthonous monoculture, using different technological approaches. At the end of the fattening period, the slaughter output of carp, reared only on natural food growing in the pond, varied from 52.7 to 54.1% without the gonads, and when including the gonads, the output increased to 58.2-63.7%. The relative share of the fillet was 76.4-78.9% of the cleaned carcass and 40.9-41.9% of the total live weight. Large amounts of fat were not accumulated in the meat of carp and the values in the separate variants varied between 1.06% and 2.28%, the protein content was 16.66-18.11% and the water content – 79.44-80.15%. The highest energy value (490.82 kJ.100-1 g) was reported in the meat of fish reared at a single stocking without manure application and the share of energy at the expense of proteins was 87.7%. A similar energy value (488.8 kJ.100-1 g) was established in the meat of fish reared at a single stocking in manure-fed ponds, however, in that variant the lowest relative share of energy at the expense of proteins (81.46%) was found out.
