The objective of the study was to establish the physicochemical and microbiological composition of milk from ewes of Middle Rodopian breed, fed on natural grass with homogeneous botanical composition, mainly mat grass Nardus stricta and pasture grass with heterogeneous botanical composition during the lactation period. The physicochemical composition of ewe’s milk of the Middle Rodopian breed, reared in two areas, demonstrates dynamical changes of fat, protein, lactose, freezing point, total solids and non-fat solids content during the lactation period. The fat and protein amounts of milk depended on the rearing area and the providing of ewes with nutritional resource. The change in the microbiological composition of milk is determined by the hygiene, animal nutrition, the environment and their health status.
