Effect of bulb and clove weights on the pungency and some quality and quantity attributes of the two ecotypes of Hamedan white garlic (Allium sativum L.)

The effect of the bulb and clove weights on pungency and some properties from quality and quantity point of view of white garlic bulbs from two regions of Hamedan called Aliabad and Heidare were studied. Bulbs were categorised to five groups by weight (smaller than 30 g, 30-40 g, 40-50 g and larger than 60 g). Each group consisted of four clove weights smaller than 2 g, 2-4 g, 4-6 g and larger than 6 g. Cloves were planted in a randomized complete block design (RCBD) with three replicates during 2 years. After harvesting, combound analysis of physical parameters and qualitative factors showed that the effect of bulb weight were not significant but with increasing the clove weight total and enzymatic pyruvate, yield, mean bulb weight and bulb diameter increased especially for clove sizes larger than 4 g. the differences between dry matter, texture, color, Dencity and sphericity were not significant. Frequency of larger bulbs increased with increasing the clove weight. After six monthes of storage the weight loss of bulbs during storage increased significantly but differences between bulb and clove sizes were not significant. Consequently yield and pungency of both garlic ecotypes increased with selecting clove seeds larger than 4 g.
