Determination of Lead, Cadmium, Mercury, Copper and Zinc concentrations in raw milk, meat and edible offal (liver and kidney) produced in cattle farms of Fars province.

Heavy metals can store in consumer's body by consumption of contaminated milk and meat then it will cause injury and burden the costs for treatment. This study was begun by selecting Shiraz, Marvdasht and Kuzerun with maximum and Zarindast, Bavanat and Nirize with minimum pollution based on a consumed oil per city extent index as industrial and non-industrial area. Lead (Pb), Cadmium (Cd), Mercury (Hg), Copper (Cu) and Zinc (Zn) were measured by ICP-AES in 648 samples of raw milk, meat, liver, kidney and feedstuffs after wet ash technique preparation. Geometric mean of heavy metals in raw milk, meat, liver, kidney and feedstuffs (milligram per kilogram) were 0.157, 0.159, 0.186, 0.163 and 0.186 for Pb, 0.013, 0.017, 0.023, 0.042 and 0.015 for Cd, 0.003, 0.002, 0.002, 0.003 and 0.005 for Hg, 0.156, 0.671, 2.745, 2.059 and 0.348 for Cu and 0.9, 15.132, 15.997, 6.383 and 1.026 for Zn, respectively. The levels of Cd, Hg, Cu and Zn in different groups of samples were shown a significantly difference (p0.05). Pb and Cd levels were over the maximum limit of EU legislation in 99.1 and 55.6 percent of raw milk samples. The concentrations of Pb, Cd and Cu in raw milk samples were significantly differed (p0.05) between industrial and non-industrial area. Metals levels in all samples (except Hg in meat, liver and kidney) were significantly changed in various seasons and Pb and Cd were in maximum concentrations in summer in all of samples. Positive correlations between Pb (p0.01) and Cd (p0.05) concentrations in feedstuffs and other samples were detected. Environmental contamination of dairy farms and feedstuffs of dairy cows can play an important role in heavy metal levels in produced raw milk and meat, then these items should be considered when establishing dairy farms and preparing feedstuffs.
