The solubility of quercetin was measured in several organic solvents. Quercetin is most soluble in ethyl lactate (6.7% w/w) and ethanol (3.2% w/w). Thermodynamic models for solid-liquid phase equilibria are explored to capture the experimental data and predict quercetin solubility on other untested (Generally Recognized as Safe) GRAS solvents. These models are the extended Hansen solubility parameter model and Non-Random Two Liquid-Segment Activity Coefficient model.
