Наиболее актуальной проблемой в современном мире является проблема здорового образа жизни и профилактики заболеваний. На сегодняшний день существуют сорбенты, проводящие комплексную очистку всего организма. В последнее время всё большее распространение получает сорбент природного происхождения – хитин, выделенный из биомассы гриба Aspergillus niger, отхода производства лимонной кислоты. Процесс выделения чистого хитина из биомассы крайне сложный и дорогой, поэтому выделяют не хитин, а хитин-глюкановый комплекс, состоящий из полисахаридов хитина и глюкана. Целью наших научных исследований является выявление особенностей состава, физико-химических свойств хитин-глюканового комплекса, полученного из продуцента лимонной кислоты Aspergillus niger, и научное обоснование возможностей и способов его использования в качестве биосорбента для лечебно-профилактического питания.
