Fatty acid composition of backfat of pig breeds reared in the republic

Оршанского района Витебской области. Использовали животных следующих пород: белорусская крупная белая (БКБ), белорусская черно-пестрая (БЧП), белорусская мясная (БМ), дюрок (Д), ландрас (Л) и йоркшир (Й). Установлено, что по суммарному содержанию в шпике НЖК преобладали порода йоркшир, белорусская крупная белая и дюрок 45,25-46,98%, что свидетельствует о его более твердой структуре и калорийности. В хребтовом шпике пород ландрас, белорусской мясной и белорусской черно-пестрой напротив преобладали МНЖК (45,20-49,48%), которые менее вредны для здоровья, чем НЖК и положительно влияют на липидный обмен, однако быстрее подвергаются окислению и порче. Установлено, что наибольшим содержанием полиненасыщенных жирных кислот отличались животные пород йоркшир и ландрас. Они достоверно превосходили все остальные породы на 1,03-3,44 п.п. (P менее 0,001). Среди белорусских пород наибольшим содержанием ПНЖК – 10,02% отличались животные белорусской черно-пестрой породы. Самое низкое содержание ПНЖК отмечено у животных породы дюрок – 8,38%.

It was used animals of following breeds: Belarusian large white (BLW), Belarusian black-and-white (BBW), Belarusian meat (BM), Duroc (D), Landrace (L) and Yorkshire (Y). It is established that the total content in the backfat of SFAs prevailed in Yorkshire Belarusian large white and Duroc breeds (45,25-46,98%) that proves its more solid structure and calories. In backfat of pigs of Landrace, Belarusian meat and Belarusian black-and-white breeds MUFAs prevailed (45,20-49,48%), which are less harmful to health than SFAs and have a positive effect on lipid metabolism, but are subjected to more rapidly oxidation and spoilage more rapidly. It is established that the highest content of polyunsaturated fatty acids have animals of Yorkshire and Landrace breeds. They significantly surpassed all other breeds by 1,03-3,44 pp (P less than 0,001). Among the Belarus breeds the highest content of polyunsaturated fatty acids - 10,02 % was in animals of the Belarusian black-and-white breed. The lowest content of polyunsaturated fatty acids was noted in animals of breed Duroc – 8,38%.
