The role and place of beef in the formation of national market of meat and meat products

俄语. Проанализировано фактическое и рациональное потребление в республике мяса и мясопродуктов. Проведено сравнение различных видов мяса по потребительским свойствам, при обобщении теоретического материала конкретизировано понятие ‘рынок мяса’, рассмотрено состояние экспорта и импорта говядины в Республике Беларусь на современном этапе. Обобщение народно-хозяйственного значения и направлений использования продукции мясного скотоводства в современных условиях позволило установить, что обеспечение населения продукцией данного вида является одним из важнейших показателей продовольственной безопасности страны. На основе проведенного исследования следует, что по потребительским свойствам говядина уступает только мясу цыплят-бройлеров и превосходит баранину, свинину и конину. Социальным аспектом в развитии мясного скотоводства выступает необходимость сбалансированности ассортимента мяса и мясопродуктов на потребительском рынке с учетом насыщения рационов питания населения страны. Данная тенденция является благоприятной предпосылкой для дальнейшего наращивания экспорта белорусской продукции.

英语. In a course of the research there was studied real and rational consumption of meat and meat products in the Republic of Belarus. There was compared different kinds of meat according to consumer qualities, generalized theoretical material and specified the notion ‘meat market’, examined the state of export and import of beef in the Republic of Belarus at present. Generalization of national economic importance and uses of meat products of cattle in modern conditions revealed that the maintenance of the population of this type of products is one of the most important indicators of food security of the country. On the basis of the research it is shown that consumer properties beef is second only to the meat of broiler chickens, and is superior to lamb, pork and horsemeat. Social aspect in the development of beef cattle advocates the need for a balanced assortment of meat and meat products in the consumer market, taking into account the saturation of diets of the population. This trend is a good prerequisite for further growth of the Belarusian export.
