Food is an important determinant of a person's life, health and work ability. Foods that man uses in the diet may be of plant, animal or mineral origin, whereas we in this paper to keep the details of safety of food of animal origin. Foods you will pay attention to meat and meat products, fish and fish products, milk and dairy products, eggs and egg products. Analyzed have 1951 samples of food of animal origin. This number of samples was carried out 7324 Microbiological analysis of the requirements of ISO standards for certain types of microorganisms accredited methods.Laboratory the methods of their use of the latest legal regulations and inter-laboratory comparisons with European reference laboratories organized by cooperation. The parameters of microbiological analysis of 7130 analyzes were satisfactorily in accordance with the Regulations on the general and specific food hygiene requirements at any stage of production, processing and trade (Official Gazette of RS br.72/10) while the 154 parameters of microbiological analyzes were unsafe to microbiological parameters of food safety. In March and April was the largest number of performed microbiological analysis of food of animal origin from 934 to 1032 analysis. Number of tests that have met in relation to the microbiological criteria in March was 915 while in April it was 1005 samples. According to the number of faulty analysis of March and April are the months when the highest number of faulty analysis of 27 and 28 faulty microbiologicalanalysis.
