Wzrost Lactobacillus plantarum w obecności wybranych związków polifenolowych | The growth of Lactobacillus plantarum in the presence of some polyphenolic compounds

Polifenole roślinne ze względu na powszechnie znane prozdrowotne właściwości antyoksydacyjne oraz antybakteryjne są stosowane w przemyśle spożywczym i kosmetycznym jako stabilizatory tłuszczu i naturalne antyseptyki. Celem pracy było określenie wpływu wybranych związków polifenolowych w stężeniach nieprzekraczających 100μg•cm(-3) na Lactobacillus plantarum 788 mający zastosowanie przemysłowe. Wpływ naringiny, kwercetyny, kwasu galusowego i ferulowego na wzrost L. plantarum 788 określono na podstawie pomiarów zmętnienia zawiesiny bakteryjnej przy użyciu czytnika mikropłytek Power Wave HTmicroplate. Największy efekt dodatku polifenoli obserwowano w pierwszych 7 godzinach inkubacji. Użycie glikozydowej pochodnej naringeniny stymulowało wzrost bakterii zależnie od stężenia. Dodatek kwercetyny w stężeniu 100μg•cm(-3) wywołał spowolnienie tempa namnażania bakterii zarówno w fazie logarytmicznego wzrostu, jak i w fazie stacjonarnej. Dodatek kwasów fenolowych w badanych stężeniach działał stymulująco.

Plant polyphenols thanks to the generally known health promoting antioxidant and antibacterial properties are use in the food and cosmetic industries to increase the oxidative stability of the fat-rich products and as natural antiseptics. The aim of the work was to evaluate the impact of some polyphenolic compounds in concertation not exceeding 100μg•cm(-3) on the growth of Lactobacillus plantarum. The impact of the naringin, quercetin, gallic and ferulic acids on the bacteria growth was determined by the turbidity measurements of bacterial suspentions in microtitre plate reader Power Wave HTmicroplate. The strongest effect of poliphenols addition was observed during first 7 hours of incubation. The stimulatory effect of glycoside derivative of naringenin was dose-dependent. The addition of quercetin in 100μg•cm(-3) concentration caused a slowdown multiplication of bacteria both in the logarithmic growth phase and in the stationary phase. The addition of phenolic acids in the tested concentrations stimulated the bacteria growth.
